March Harvest Lunch — Flathead and peppers
It's a lovely time of year for produce here on Flinders Lane, where the offerings from the last of the summer vines bring pop and colour to our plates. Last month's heat means peppers are in their prime right now and they are at the heart of our Harvest Lunch dish for March.
Ramarro Farm bullhorn, wax and friggitello peppers are seared and braised, forming a base for flathead fillets seared on the plancha. Seasoned with anchovy, basil and olive herb, it's lovely to have a glass of 2022 Yeringberg Viognier from Coldstream in the Yarra Valley alongside. Located near to where these peppers are grown, Yeringberg is looking toward their 162nd birthday and delight us every year with the release of their iconic Rhône whites.

We sourced January’s tomatoes from Ramarro Farm in The Patch outside of the Dandenong Ranges. Established by former Cumulus manager, Oliver Shorthouse and his wife Lisa, also a Cumulus alum, they grow extraordinary leaves and vegetables for us in the wet and volcanic soil of The Patch, deep in The Dandenongs. Initially working part time in both businesses, Oliver became a full time farmer about 5 years ago.
