July Harvest Lunch - Cime di Rapa
For the month of July, we served Cime di Rapa with pillowy ricotta gnocchi, chilli, lemon and butter. Cime di Rapa is commonly known as broccoli rabe and is a favoured ingredient in Puglia, on the heel of Italy's boot. We source ours from Ramarro Farm, where Oliver and Lisa Shorthouse grow heritage varieties in nutrient-rich red soils outside of the Dandenong Ranges.
This lunch addition was only available from Monday to Friday in July as part of our Harvest Lunch Calendar.
Our Producers
Our relationships with local producers and suppliers is what makes Cumulus Inc. what it is, keeping us motivated and enthusiastic about the next great flavour combination or how a single, fresh ingredient can sometimes be enough.
We’re sourced July’s Cime di Rapa from Ramarro Farm in The Patch outside of the Dandenong Ranges. Established by former Cumulus manager, Oliver Shorthouse and his wife Lisa, also a Cumulus alum, they grow extraordinary leaves and vegetables for us in the wet and volcanic soil of The Patch, deep in The Dandenongs. Initially working part time in both businesses, Oliver became a full time farmer about 5 years ago.
All of their produce is delivered to us within a day of harvest, making their Cime di Rapa even more mustardy, fresh and delicious in July’s dish of ricotta gnocchi.
