The Wine List

Fifteen Years on Flinders Lane

Much like our chefs and their contributions to the menu over the years, our sommeliers have championed the work of outstanding winemakers and growers, finding ways to define the relaxed personality of Cumulus Inc. through a selection of excellent wine.

To mark 15 years, our head sommelier Chris Webb has pulled together a list of wines that expresses something special about Cumulus Inc., highlighting the connections we have made while nodding to each sommelier in this time.

The selection made here pays homage to all our sommeliers, past and present.

“There’s a mutual understanding of what it really means to eat and drink at Cumulus Inc. I think that the continuity is evident in the wine list as it’s developed and changed over the years, and thanks must go to Jayden Ong, Andrew Joy, Mark Williamson, Nick Carne, Chris Ryan and current head sommelier Chris Webb. All have shared their passion and knowledge to make the list what it is today,” says Leanne Altmann, Beverage Director, Trader House.

A wonderful part of Cumulus Inc. is the promotion of all our head sommeliers from within, bringing with it a brilliant sense of what it means to eat and drink at Cumulus Inc. Of course, each new sommelier brings a piece of themselves, and Chris Webb’s love of German Riesling and old vine Australian Grenache finds a place on the current list, but all our sommeliers have left their fingerprints on our cellar, and that's what makes the list so personable.

More than just wines from the year we opened, our 15-year selection features bottles that are near and dear, that tell a story of Cumulus Inc. There are examples that feel academically and philosophically aligned to our culture and approach, and styles that exemplify technique and history, while others represent the future of wine. There are, of course, some varieties we just love to recommend because they’re best with the food. And because there are few better ways to celebrate than with a big bottle, we have included a couple of magnums ready for any occasion.

When Cumulus Inc. first opened its doors, it was envisioned as a place to drop into at any time of day, somewhere to enjoy something great to eat and drink in a relaxed environment. 15 years on, the ethos continues.
